This delicious, traditional breakfast dish gets its name because each fried egg is drizzled with a different salsa, mainly red and green.
Think of “Huevos Rancheros” but using two delicious salsas instead of one.
- Heat oil in a non-stick pan
- Quickly fry each tortilla and set on a plate (2 per plate)
- Smother each tortilla with a spoon full of refried black beans.
- Fry the eggs and layer one on top of each tortilla.
- Heat the salsas separately and drizzle on top of one egg per plate.
