Tortillas are the basis of many traditional Mexican dishes, such as tacos, enchiladas, quesadillas. A tortilla is a type of thin, unleavened flat bread made from either wheat or maize (both are authentic – depending on which part of Mexico you are from)
Corn tortillas are made from finely ground maize that has been cooked in lime water through a process called Nixtamalization – invented by the Aztecs thousands of years ago. We use a traditional recipe that uses a dried version of this maize; ‘Maseca’ – also known as Masa Harina.
These tortillas are both wheat and gluten free.
